Tiffany's Mexican Casserole

Ingredients

  • 1 package corn tortillas
  • 1 lb. ground beef, browned & drained
  • 1 onion, chopped
  • 1 can Ranch Style Beans
  • 8 oz. shredded cheddar cheese
  • 1 can Cream of Mushroom soup
  • 1 can diced Rotel

Preparation

Step 1

Tear tortillas in pieces and use to line the bottom of an
oblong baking dish. (You won’t use the whole package;
just enough to cover the bottom of the dish.) Add a layer
of ½ ground beef, ½ of the chopped onion, ½ beans
and ½ cheese. Repeat layers of ground beef, onion,
beans & cheese. Mix soup and Rotel together
before pouring over top of casserole. Bake uncovered
at 350 degrees for 1 hour.
