Tomatillos are high in Vit C and K.
- 2 T. olive oil
- 8 tomatillos
- 1/2 white onion
- 3 cloves garlic (leave in outer skin until cooked)
- 1-2 jalapenos (tops cut off)
- 5 green chilis (tops cut off)
- salt and pepper to taste
- 2 t. cumin
In a large sauce pan heat olive oil over medium high heat. Place whole tomatillos, onion, garlic, and peppers in pan and cook until all are browned and begin to get transluscent. Rlace in food processor and add seasoning. Pulse until chopped and blended.
