French Onion Soup

Ingredients
- 4 Tbsp butter
- 2 Lbs. onions (7 cups)
- 3 Tbsp flour
- 1 clove garlic
- 1 Tsp sugar
- thyme
- splash cognac (optional)
- 2 Tbsp olive oil
- 2 quarts (8 cups) beef stock
- 2 qt. water plus 8 beef boulion cubes
- parsley
- 1 cup dry white wine
- ffrench bread

Preparation
Step 1
Melt butter in large sauce pan. Add olive oil. Stir in onions, salt, sugar and garlic. Cook uncovered, stirring occationally for 20 - 30 minutes or until onions are golden brown. Sprinkle flour over onions and cook stirring for 2 - 3 minutes. Remove from heat.
In seperate pan heat stock (or combine water and cubes until disolved)
Add wine and cognac.
Stir hot stock into onions and simmer covered for another 30 - 40 minutes. Brown garlic bread.
Put soup in oven-proof bowls, top with French Bread and Mozza cheese. Or what ever cheese you like
Put in oven to melt chhese
