Ethiopian Injera is an easy way to make a flatbread that is perfect to sop up any scrumptious sauce. - 3 cups self-rising flour
- 1/2 cup whole wheat flour
- 1/2 cup cornmeal
- 1 tablespoon active yeast
- 3 1/2 cups warm water

Step 1
Mix self-rising flour, whole wheat flour, cornmeal, active yeast, and warm water together.
Cover and let sit 1 to 6 hours.
Whip 2 cups of the batter with a 1/2 cup water, and cook 1/3 cups of this mixture in a 10-inch pan, preheated on medium-high heat. Cook each flatbread until browned on both sides about 5 to 7 minutes.
