Ingredients
- 2 onions
- 1/2 c butter
- 1/2 c celery leaves
- 1TBL minced parsley
- 1/2tsp sae
- 1-1/2 c wild rice
- 4c meat or poultry stock
- salt and pepper

Step 1
Saute onions, finely chopped in 1/2c butter stirring almost constantly, til slightly brown. add 1/2 c chopped celery leaves, 1T minced parsley & 1/2 tsp sage and saute the mixture for 3 minutes. Add 1-1/2 c wild rice, washed and drained. Moisten the stuffing with 4c meat stock and season with salt and pepper. Mix throughly and simmer it gently for 35-40 minutes or til rice in tender and moisture is almost absorbed. Cool - stuff cornish hens
