Ingredients
- Pie Crust:
- 1 unbaked pie shell
- 1 lb. sweet potatoes (about 3 medium)
- 2 large eggs
- 1 cup sugar
- 1/8 teaspoon nutmeg
- 2 tablespoons flour
- 1/2 cup milk, plus 2 tablespoons
- 9 tablespoons butter or margarine, melted
- 3 tablespoons white corn syrup
- 1/4 teaspoon vanilla
- Ice water
- 1-1/2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 3 tablespoons butter cut into cubes or 1/2 cup shortening
Preparation

Bake, boil, or microwave sweet potatoes until done all the way through. Peel off skin and let cool. Place sweet potatoes in a mixing bowl and beat until smooth. Add eggs and beat until smooth. Mix all the dry ingredients together in separate bowl for about 1 minute, and then add the sweet potato and egg mixture. mix until well-blended, then add milk and stir.
Add melted butter, corn syrup, and vanilla. Mix well, pour into pie shell and bake in a preheated oven at 375 degrees for about 45 minutes or until set.
Pie Crust:
Place all the dry ingredients together and add butter cubes. Place in a food processor or use your hands to mix the butter and flour until the batter has a pebbly texture. Then add ice water 1 tablespoon at a time until you have smooth pie dough. You should have enough dough for one 9" pie plate top and bottom.
