White Bean, Chicken, and Chili Soup

Ingredients
- 1 Tbsp olive oil
- 1 medium onion, finely diced
- 4 garlic cloves, finely chopped
- 1/4 tsp oregano
- 2 tsp ground cumin
- 1 pinch cayenne (optional)
- 1 pinch allspice
- 2 - 4 ounce cans chopped green chilies
- 1 pound chicken breast, cooked and diced
- 4 cupes chicken broth
- 3 - 15 ounce cans white beans (cannellini, great northern, navy, etc)
- 1- 16 ounce bag frozen corn
- 8 ounces Monterey Jack cheese, grated

Step 1
Heat oil in soup pot over medium high heat. Saute onions until translucent, about 5 minutes.
Stir in garlic, spices, and chilies and saute another minute.
Add diced chicken and broth, and simmer about 5 minutes.
Add beans, corn, and half the cheese. Simmer another 15 minutes.
Serve with remaining cheese sprinkled on top.
