White Bean, Chicken, and Chili Soup

Ingredients

  • 1 Tbsp olive oil
  • 1 medium onion, finely diced
  • 4 garlic cloves, finely chopped
  • 1/4 tsp oregano
  • 2 tsp ground cumin
  • 1 pinch cayenne (optional)
  • 1 pinch allspice
  • 2 - 4 ounce cans chopped green chilies
  • 1 pound chicken breast, cooked and diced
  • 4 cupes chicken broth
  • 3 - 15 ounce cans white beans (cannellini, great northern, navy, etc)
  • 1- 16 ounce bag frozen corn
  • 8 ounces Monterey Jack cheese, grated

Preparation

Step 1

Heat oil in soup pot over medium high heat. Saute onions until translucent, about 5 minutes.

Stir in garlic, spices, and chilies and saute another minute.

Add diced chicken and broth, and simmer about 5 minutes.

Add beans, corn, and half the cheese. Simmer another 15 minutes.

Serve with remaining cheese sprinkled on top.
