Blackened Fish

Ingredients

  • 4 fresh or frozen fish fillets
  • 1/2 teas. onion powder
  • 1/2 teas. garlic salt
  • 1/2 teas. ground red pepper
  • 1/2 teas. dried basil, crushed
  • 1/4 teas. ground white pepper
  • 1/4 teas. dried thyme, crushed
  • 1/4 teas. pepper
  • 1/8 teas. ground sage
  • 1/4 cup butter, melted

Preparation

Step 1

Thaw fish if frozen. In a small bowl combine remaining ingredients, except butter. Brush both sides of fish with some melted butter; coat both sides with seasonings.

Place an iron skillet over hot coals. Preheat the skillet 5 minutes or till a drop of water sizzles. Add the coated fillets to skillet. Carefully, drizzle about 2 teas. of the melted butter over fish. Grill fish 2 1/2 to 3 minutes or til blackened. Turn fish and drizzle with 2 teas. of the melted butter. Test with a fork.
