Roasted Asparagus with Fresh Tarragon

  • 1 lb fresh asparagus
  • 1 tbsp olive oil
  • 1 tsp dijon mustard
  • 1tbsp freshly squeezed lemon juice
  • 1 tbsp minced shallots
  • ¼ tsp salt and pepper each
  • ½ tsp grated lemon peel
  • 1 tbsp fresh tarragon, chopped

Step 1

Preheat oven to 425.
Snap tough ends off of asparagus.
Cut asparagus spears on the diagonal, into 2-inch lengths.
Mix oil, mustard, lemon juice, shallots and salt/pepper in small bowl.
Place asparagus in shallow baking pan,for one layer of asparagus.
Pour dressing over asparagus.
Roast, stirring once about 6-8 minutes.
Stir in lemon peel and tarragon.
Serve hot.
