Ingredients
- 1 1/2 cups butter (room temperature)
- 1 cup brown sugar (firmly packed)
- 4 eggs (separated)
- 3 cups finely grated raw carrots
- 2 tablespoons cold water
- 2 tablespoons lemon juice
- 2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup breadcrumbs

Step 1
In the electric mixer, cream the butter with brown sugar. Add the egg yolks and beat until thick. Add the grated carrots, water, lemon juice, flour, baking soda, baking powder and salt. Mix well on low speed. In a separate bowl, beat the egg whites until stiff. Fold the beaten egg whites into the carrot mixture. Dust the greased ring mold with breadcrumbs. Place carrot mixture in the mold. Preheat the oven to 350 degrees. Bake for 1 hour. Remove from the oven and allow to cool for 3 minutes. With a dull knife, loosen the edges and center of the ring.
Serve with green peas in the middle.
