  • 1 onion diced
  • 1/4 cup red pepper diced
  • 1/4 cup green pepper diced
  • 6 Tbsp unsalted butter
  • pinch of thyme
  • 4 cups chicken stock
  • 1 Tbsp Sherry
  • 2 lemons juiced
  • 1/2 cup celery diced
  • 1/2 tsp red pepper flakes
  • 2 Tbsp green onions chopped
  • 1 Tbsp garlic chopped
  • 2 Tbsp flour
  • 2 large russet potatoes diced and blanched
  • 6 oz of turkey

Step 1

Start with a skillet at med-high heat. Add butter, all butter to melt and become hot. Keep stirring. A little browning of the butter is good. Add turkey and saute for 4 minutes stirring occasionally. We are looking for the turkey to carmelize to add additional flavor. Add onion, peppers, celery, and garlic. Saute 2-3 min or until onions are translucent. sprinkle the flour over the mixture and gently stir. Cook for 2 minutes and then add all the remaining ingredients but the lemon.
