Steak with Paprika Potato Salad

Ingredients
- 1/2 pound skirt steak
- 1/2 tsp. paprika
- salt
- pepper
- 1 pound large red potatoes, cut into 1/2 thick slices
- 2 Tbsp. EVOO
- 1 clove garlic, finely chopped
- 2 Tbsp. lemon juice
- 1 cup spinach or arugula

Step 1
Rub steak with paprika, salt and pepper; let sit.
Meanwhile in a large pot, combine potatoes and enough salted water to cover. Boil and cook until crisp-tender, about 8 minutes; drain and transfer to large bowl. Add the olive oil, garlic and lemon juice; season with salt and pepper. Toss to coat.
Arrange potatoes on the grill and cook, turning once until crisp, about 5 minutes. Transfer back to bowl and let cool. Toss in arugula/spinach.
Grill steaks. Remove from heat, let sit for 10 minutes. Slice very thin and serve over potato salad.
