Lemon Poppyseed Butter Cake

Ingredients
- 2 3/4 cup flour
- 2 1/4 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup unsalted butter
- 1 3/4 cup sugar
- 4 jumbo eggs, separated
- zest of two lemons
- 2 tsp. vanilla
- 1 cup buttermilk
- 1/3 cup poppyseeds

Step 1
Cream butter and sugar, add egg yolks, lemon zest and vanilla. Set aside. Combine dry ingredients in a separate bowl, set aside. Add dry mixture to butter mixture, then add buttermilk and poppyseeds. Beat egg whites with a pinch of salt, stir one quarter into batter, fold in the remaining three quarters beaten whites. Cook in Bundt pan in lower 1/3 of oven for about 55 minutes at 350.
