Ingredients

  • Farmers' Market Salad
  • * 2 heads bibb lettuce
  • * 1/4 cup carrots, peeled and finely sliced
  • * 1/4 cup asparagus spears, peeled and cut on the bias
  • * 1/4 cup green beans, cut in half
  • * 1/4 cup cherry tomatoes, halved
  • * 1/4 cup cucumber, seeded and sliced
  • * 1/4 cup summer squash, sliced
  • * 1/4 cup chives, finely chopped
  • * 1/4 cup dill, finely chopped
  • * 1/4 cup parsley, finely chopped
  • Dijon Shallot Herb Vinaigrette
  • * 1/4 cup Champagne vinegar
  • * 2 tablespoons shallots, finely diced
  • * 1 teaspoon Dijon mustard
  • * 3/4 cup canola oil
  • * 1/4 cup herbs, chopped
  • * 1 pinch salt and pepper to taste

Farmers' Market Salad

1. Separate the leaves of the Bibb lettuce. Wash lettuce well in cold water and spin dry in a salad spinner. In a medium bowl mix all of the vegetables together. Sprinkle with a pinch of salt and pepper, fresh herbs. Toss with 2 tablespoons of vinaigrette. Arrange the Bibb lettuce leaves on a plate and drizzle with vinaigrette. Top with the dressed vegetables. Add another layer of Bibb and then more vegetables.

Dijon Shallot Herb Vinaigrette

1. In small mixing bowl add the vinegar and mustard and whisk together well. Add the oil in a slow stream, whisking until emulsified. Add chopped herbs and season well.
