Ingredients
- 2 tbl. olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1/4 c. chopped fresh parsley
- 1 1/2 tsp. salt
- 1/4 tsp. saffron or curry powder
- 1/4 tsp. pepper
- 1 bay leaf
- 4 c. water or vegetable broth
- 1 tsp. lemon juice
- 1 lb. fish fillets, cut into 2 inch pieces
- 1 12 oz. package frozen uncooked shrimp
- 1 6 oz. package (3/4 c.) frozen uncooked crab or lobster meat
- 1 pint fresh oysters or clams, undrained
- 1 8 oz. can tomatoes
- julienned carrots
- chopped leek
- fresh green beans
- pinch cayenne pepper
Preparation
Step 1
Heal oil in Dutch oven over medium high heat. Cook and stir onion, garlic and leek in oil for 2-3 minutes. Add remaining ingredients; mix well. Bring to a boil. Reduce heat to low; cover and simmer 20-30 minutes or until shrimp turn pink, stirring occasionally. Remove bay leaf.
Any combination of fish or seafood, fresh or frozen, can be used. Vegetables can be varied also.
