Peach Custard Pie

Ingredients

  • 1- 9 inch pie crust
  • 1 1/2 c sliced peaches
  • 1/3 cup sugar
  • 1 Tbsp quick tapioca
  • 1 c skim milk
  • 1 beaten egg
  • 1/4 tsp salt
  • 1/3 tsp almond extract
  • 1/4 tsp vanilla
  • pinch nutmeg
  • pinch cinnamon

Preparation

Step 1

Mix peaches and sugar. Add tapioca to milk and let stand 10 minutes. Add egg to milk mixture. add salt, almond extract and vanilla. Arrange peaches in pie crust and sprinkle with cinnamon and nutmeg, Cover peaches with milk/egg mixture.

bake at 425 degrees till custard is set, about 45 minutes. Cool completely.
