Ingredients
- 1 lb. Orange Roughy
- 1 cup white wine or chicken broth
- 1 tsp corn starch
- 1/2 cup orange juice
- 1 Tbs. Grand Mariner or Brandy
- chives or parsley or cilantro or green onions sliced
Preparation
Step 1
Place orange roughy in microwavable dish, add enough wine or chicken broth so it will steam the fish. Cover with syran wrap and cook for 6-8 minutes. Or you could bake in the oven with a little wine or chicken broth for a drier fish. (I baked it at 425° until done)
Mix the OJ and corn starch on the stove top until it rocks and rolls., stirring until thickened. Add brandy and when fish is done pour the sauce over. Garnish with whatever greens you'd like.
