Ingredients
- 4 eggplants (1 pound each) cut lengthwise into 1 inch slices
- 2 tsp kosher salt
- 4 Tbsp olive oil
- 1/2 tsp ground pepper
Preparation
Step 1
Sprinkle eggplant with salt and cover with paper towels. let stand 30 minutes then rinse each piece and blot dry. Brush witl olil and season with pepper. grill with cover closed 16-20 minutes until brown and tender.
