Shirley's Zucchini Bread

This was a recipe given to me by my friend, Shirley Nairn. Shirley worked at Motorola in Schaumburg; we would try to spend some time together whenever we could when I went there on business. She made this one night when I went to her house for dinner.

Ingredients
- 1/2 cup margarine
- 1/2 cup vegetable oil
- 1 3/4 cups sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup sour cream or sour milk (which you can make by infusing 1/2 cup milk with 1 tsp lemon juice or vinegar
- 2 1/2 cups flour
- 4 Tbsp cocoa
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 cups grated zucchini, unpeeled
- Optional: 1/2-3/4 cup chocolate chips
- 1/2 cup chopped nuts
Preparation
Step 1
Preheat oven to 325 degrees.
Cream first three ingredients together.
Add eggs, vanilla, sour cream
Then add dry ingredients.
Beat well.
Stir in grated zucchini.
Pour into 9 x 13 greased pan
If you decide to use, sprinkle chocolate and nuts on top.
Bake for 40-45 minutes
