Shirley's Zucchini Bread

By

This was a recipe given to me by my friend, Shirley Nairn. Shirley worked at Motorola in Schaumburg; we would try to spend some time together whenever we could when I went there on business. She made this one night when I went to her house for dinner.

Ingredients

  • 1/2 cup margarine
  • 1/2 cup vegetable oil
  • 1 3/4 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup sour cream or sour milk (which you can make by infusing 1/2 cup milk with 1 tsp lemon juice or vinegar
  • 2 1/2 cups flour
  • 4 Tbsp cocoa
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups grated zucchini, unpeeled
  • Optional: 1/2-3/4 cup chocolate chips
  • 1/2 cup chopped nuts

Preparation

Step 1

Preheat oven to 325 degrees.

Cream first three ingredients together.

Add eggs, vanilla, sour cream

Then add dry ingredients.
