Refrigerator Cucumber Pickles

Ingredients

  • 3 medium-sized cucumbers, thinly sliced
  • 1 medium-sized onion, thinly sliced
  • 1 medium-sized green bell pepper, coarsely chopped
  • 3 cups sugar
  • 1 1/2 cups white vinegar
  • 3 tablespoons celery seed
  • 1 1/2 teaspoons salt

Preparation

Step 1

In a 9" x 13" baking dish, combine the cucumbers, onion, and bell pepper; set aside.

In a medium-sized saucepan, bring the remaining ingredients to a boil over medium-high heat, stirring occasionally. Pour the vinegar mixture over the cucumber mixture and allow to cool completely.

Cover and chill overnight before serving.

Makes about 8 cups.

Notes:
For a little more color, I sometimes use half of a red bell pepper and half of a green one. (It depends on what I've got on hand!)
