Sunday Afternoon Pickles

Ingredients

  • 1 cup white vinegar
  • 1 cup water
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 8 cups peeled and thinly sliced Kirby or other cucumbers (about 3 pounds)

Preparation

Step 1

In a large bowl, combine the vinegar, water, sugar, and salt; mix well. Add the cucumbers and toss until well coated.

Cover and chill for at least 2 hours, or overnight.

This will keep in a sealed container in the refrigerator for several weeks.
Notes

You can spice it up a bit by adding a handful of chopped scallions or dill weed along with the cucumbers.
