Mini-Quiches

Ingredients

  • 1 15 oz package of refrigerated pie crusts
  • 1 1/2 c cheddar cheese, shredded
  • 2 T green onion, chopped
  • 1 T pimientos, chopped
  • 2 eggs
  • 1/2 c milk
  • 1/4 t salt
  • dash nutmeg

Preparation

Step 1

1) Use a cookie cutter to cut 2 1/2 inch circles in the pie crusts (about 12 per crust).

2) Press each round into a greased mini-muffin tin.

3) Add 1 T cheese to each round.

4) Mix eggs, milk, salt, and nutmeg and pour over the cheese.

5) Bake 25 min. at 375 degrees.
