  • 1 can evaporated milk (385 ml)
  • 1 1/3 cups water
  • ½ cup long grain rice
  • 2 eggs
  • 1/3 cup sugar
  • 1/4 tsp cinnamon
  • ½ cup raisins (optional)
  • 1 tsp vanilla

Step 1

In medium saucepan, combine milk, water and rice. Cook and stir until mixture boils; reduce heat to low, cover and cook 40 minutes longer, stirring frequently. In small bowl, beat together eggs, sugar and cinnamon. Stir into hot rice mixture with raisins. Cook and stir 3 minutes longer or until mixture is thickened. Remove from heat; stir in vanilla. Serve warm or cool.
