Cheddar, Tomato & Bacon Oven Omelette

Ingredients

  • 8 strips bacon
  • 6 eggs
  • 1 cup milk
  • 3/4 cup tomatoes, diced
  • 1/4 cup green onion, chopped
  • salt to taste
  • 1 ¼ cups grated Cheddar cheese, divided
  • 1 tbsp Parmesan cheese

Preparation

Step 1

Preheat oven to 350. In a large skillet, cook bacon until crisp. Drain and crumble bacon and set aside. In a large bowl, lightly beat eggs. Stir in milk. Add bacon, tomatoes, green onion, salt and 1 cup Cheddar cheese. Pour into greased 9" x 9" baking dish. Sprinkle with Parmesan cheese. Bake for 25 minutes. Remove from oven and sprinkle remaining 1/4 cup Cheddar cheese over omelette. Let stand for 5 minutes.
