Sopa de Albondigas (Meatball Soup)

Ingredients

  • 1 1/2# ground beef
  • 2 eggs
  • 2 onions (peeled, minced fine)
  • 1/8 tsp marjoram
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 quarts beef broth
  • Optional: Fresh chopped cilantro.
  • Can also finely chopped carrots, celery, corn, or other vegetables if desired.

Preparation

Step 1

Mix meat, eggs, onions and seasonings together. Form into small balls. Heat broth to boiling point and drop in meat balls. Reduce heat and simmer until meat balls are done, about 1/2 hour.
