This delicious potato bake makes an excellent and easy brunch. It can be made the day before and dressed up with fruit salad and toast or fresh-baked pastries.

Ingredients

  • 2 lbs of your favourite little potato variety
  • 8 eggs
  • 1 cup shredded cheddar cheese
  • 1 cup chopped ham
  • 1/2 cup chopped green onion
  • 1 cup milk
  • Kosher salt
  • Cracked pepper
  • 1 cup breadcrumbs
  • 1/4 cup melted butter

Step 1

Grease a 9x13 inch baking pan or casserole dish.

Cook the potatoes and refrigerate until cold. Then, quarter them. Meanwhile, beat the eggs, cheese, ham, onion, milk, salt and pepper until well combined. Add the potatoes and gently mix until well coated. Pour the mixture into the greased baking dish and spread evenly.

Combine the breadcrumbs and melted butter, and then sprinkle evenly over top. Wrap the dish and place in the refrigerator until Christmas morning.

To cook, preheat the oven to 350_F (175_C). Take the potato dish from the refrigerator, remove the plastic wrap and cover it with foil. Bake for 45 minutes. Remove foil and continue baking for another 15 minutes or until the eggs are set.

You can also personalize this recipe by adding in your family’s favourite ingredients: peppers, bacon, mushrooms, etc. (If you’re using mushrooms, just pre-cook them or they may get watery.)
