Ingredients
- 2 cups warm milk (2 cups water, 1/3 cup powdered milk)
- 1/2 cup sugar
- 1/2 cup pumpkin
- 1/3 cup oil
- 1 egg
- 1 Tablespoon salt
- 1 Tablespoon yeast
- 7 1/2 cups flour

in mixing bowl of a bosch or ka, add warm milk or water and powdered milk, sugar, pumpkin, oil, egg, salt and yeast. pulse to mix. turn machine on low and add flour one cup at a time until dough comes together and pulls away from the sides of the bowl. it should be soft but not sticky. if needed, adjust flour by less or more. mix for 8 minutes. put in a greased bowl and let rise until doubled. punch dough down, shape into rolls and place on greased baking sheets. let rise another half hour or 45 minutes. bake at 350 for 10 minutes. (depending on the shape of your rolls. my mahusive crescents needed about 13 minutes.)
*don't over-rise. for best flavor and texture, each rise should take no longer than an hour; in some warm houses/climates, or with some instant yeasts, as few as 20 minutes. at my house, it's anywhere from 30-45 minutes each rise. i always set a timer so i will remember to check the dough at a half hour.
* this recipe makes a pretty big batch so i usually make up one tray of rolls and one big 2 pound loaf of bread. the bread is great toasted for a turkey cranberry sandwich!
