Tomato, Herb & Goat's Cheese Galette

Ingredients

  • Use pastry as you would for pie and place in a spring form pan. Prick with holes and bake at 425 for 12 minutes or until done. Place on rack and cool.
  • 2 tsp olive oil
  • ½ onion, peeled, and thinly sliced
  • 8 cheery tomatoes, halved
  • ½ cup lightly packed fresh herbs such as basil, tarragon and oregano, coarsely chopped
  • 1 large egg
  • ½ cup sour cream
  • salt and freshly ground pepper
  • ½ cup goat’s cheese, crumbled

Step 1

Use pastry as you would for pie and place in a spring form pan. Prick with holes and bake at 425 for 12 minutes or until done. Place on rack and cool.

To make filling, heat oil in pan. Add onion and saute until soft and clear. Spread over pastry. Scatter with half of tomatoes and half the herbs. Combine egg, cream, salt and pepper in a bowl. Whisk to blend. Pour over tomatoes and herbs and top with goat’s cheese. Bake in 350 oven for 25-30 minutes or until golden and set. Remove to rack to cool. Serve warm or at room temperature.
