Ingredients
- 1 tbl. margarine
- 1/3 c. sliced green onions
- 1 tsp. chopped garlic
- 3 c. cooked wild rice
- 1 1/2 c. chopped cooked chicken breast
- 1 1/2 c. fresh spinach, cut into pieces
- 1 11 oz. can mandarin orange segments, drained (reserve 3 tbl. juice)
- 1/4 c. sliced almonds
Preparation
Step 1
Melt margarine in a 10 inch skillet until sizzling; add green onions and garlic. Cook over medium heat 1 minute.
Add wild rice and chicken. Continue cooking stirring occasionally, until heated through (2-3 minutes).
Add spinach, oranges and 3 tbl. reserved mandarin orange juice; toss gently to coat. Garnish with almonds.
