  • 3 c fresh cranberries
  • 1 1/2 c sugar
  • 1 medium orange for zest and juice
  • 1 c dried sweet cherries
  • 2- crust pie crust pastry

Step 1

preheat oven to 375. line baking sheet with foil and coat 9 inch pie pan with cooking spray.
place 1 1/2 c cranberries, 1/2 c sugar, orange zest and cherries in food processor and pulse until berries are coarsely chopped. transfer to bowl and stir in remaining 1 1/2 c cranberries, remaining 1 c sugar and orange juice.
roll 1 piecrust into 10 inch disc. press into prepared pan. spoon in cranberry mixture and brush edges with water.
roll second piecrust into 10 inch disc. cut dough into 1 inch wide strips using knife. lay strips in lattice pattern over top of pie, pressing edges to seal. trim off any excess from strips. sprinkle lattice with sugar and bake on prepared baking sheet 55 minutes or u ntil filling is bubbly and crust is golden. cool on wire rack.
