Ingredients
- 6 large bell peppers
- 1lb. lean ground beef
- 1 1/2 c. cooked, long grain rice
- 2 large eggs lightly beaten
- 1/2 c. Pecorino Romano cheese
- 2T. minced parsley
- 1/2 tap salt
- 1/2 tsp black pepper
- 1 can (28oz) tomato sauce
- 1/2 tap. garlic powder
Preparation
Step 1
1) lightly spray cooker with pam
2) cut small hole in the bottom of each pepper. combine ground beef, rice, eggs, cheese, parsley, salt and 1/4 tsp of black pepper in large mixing bowl. spoon evenly into peppers. do not pack down.
3) stand in slow cooker
4)combine tomato sauce, garlic powder and remaining pepper and pour over peppers.
5) cover and cook on low 4-5 hours or until tender
