Huevos en Tostadas (Eggs in Toast) 1 Picture

Ingredients

  • 4 slices bread (if bread is real fresh let it sit out on the counter to dry out a bit)
  • 6 eggs (or 1 1/2 cups egg beaters)
  • 1 t. garlic powder
  • 1 t. salt
  • 1 t. pepper
  • 1 t. smoked paprika
  • 1-2 t. Tabasco
  • Tomato and avocado to garnish

Preparation

Step 1

Beat 2 of the eggs and seasoning together. Cut the center of each slice of bread out with a round cookie cutter. Soak bread in egg mixture. Place in pan on medium high heat sprayed with cooking spray. Crack an egg (or add 1/2 c egg beater) into the center of each piece of bread. Cook about 2 minutes then turn over and cook another minute. Garnish with avocado and tomato. Serve with salsa.
