Pasta Salad with Sun Dried Tomatoes

Ingredients
- 1 lbs of cooked bow tie pasta, drained and cooled
- 1/2 C olive oil
- 1/2 lbs of bocconcini cheese or mozzarella
- 1 C sliced basil
- 1 C sun dried tomatoes packed in oil, drained and sliced thinly
- 3 garlic cloves minced

- 4 anchovy fillets, minced (optional)
- 1 T capers, rinsed
- 1 can of pitted black olives, drained

Preparation
Step 1
In a large bowl, toss the pasta with the olive oil. Stir in all the other ingredients. Let sit at room temp. for 30 minutes so the flavors marry before serving.
