Loretta's Zucchini Beef Bake

With zucchini fresh from our garden this makes a delicious Summer or cold winter Casserole

Ingredients

  • Preheat oven to 350°
  • 4 cups Zucchini, thinly sliced
  • 3/4 Lb. Ground beef or Turkey
  • 1/2 cup Onion, chopped
  • 1 garlic clove, peeled and minced
  • 1 cup of cooked long grain rice
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Basil , dried and crushed
  • 1/2 teaspoon Oregano, dried and crushed 1/4 teaspoons
  • Pepper
  • 1 Egg
  • 1/2 cup Cottage cheese

Preparation

Step 1

1. Preheat oven to 350°
2. Cook enough rice for 1 cup
3. Cook zucchini in a small amount of water for 1 to 2 minutes, drain well and set aside
4. In a skillet, cook ground beef, onion and garlic.
5. Stir in:
rice,
tomato sauce,
salt,
basil,
oregano , and
pepper
6. Mix together:
1 egg, beaten
1/2 cup cottage cheese
Arrange 1/2 of the zucchini in a 10 x 6 x 2 buttered baking dish
Sprinkle lightly with salt and spoon the mixture over zucchini
Spread cottage cheese mixture over meat mixture
Top with remaining zucchini slices and bake at 350° for 15 minutes
Spread 1 cup shredded cheddar cheese (4 0Z.) over the top and bake for another 10 minutes
let stand for 10 minutes before serving
