Renee McElrays Mac and Cheese

Ingredients

  • 2 cups elbow pasta, cooked until al dente
  • 16 oz cheddar cheese ½ cubed, ½ shredded
  • 8 oz monterry pepper jack, cubed
  • 2 tsp all-purpose flour
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp cayenne pepper
  • ½ tsp dry mustard
  • 1/8 tsp ground nutmeg
  • 4 tbs sour cream
  • 1 large egg beaten
  • 1 cup heavy cream
  • 1 cup half and half
  • 4 slices bread
  • 1 tbs butter

Preparation

Step 1

Preheat oven to 350 degrees.
In large bown toss together pasta and cheese cubes
And pour into 2 qt baking dish. In large bown mix
Together flour, salt, pepper, cayenne, dry mustard,
Nutmeg, sour cream, egg, heavy cream, half n half.
Pour over the pasta and cover with the shredded
Cheddar. Bake uncovered until top is just beginning
To brown, about 35 minutes. Meanwhile cut bread
Into crouton size squared. In a skillet over medium
Heat, melt butter, and add cubes and toast until
Golden. Sprinkle bread cubes on top of the mac
And cheese and bake until golden brown about
10 minutes more.
