Beer Butt Chicken

Ingredients

  • 1 5-pound chicken
  • ¼ cup olive oil
  • ¼ cup Duff's Roadkill Helper
  • 1 12-ounce can of beer
  • 4 garlic cloves, peeled and smashed

Preparation

Step 1

o Rinse the chicken, rub it with oil
o Sprinkle 1 tablespoon of spice rub in cavity and rub the rest on the chicken
o Open the beer can, drain a little
o Toss smashed garlic into the can
o Place the chicken on the can
o Roast chicken in shallow roasting pan for 1 ¼ hours
