Gumdrop Cookies

"My mother used to make these at Christmas time each year. Sometimes she would mail them in with other cookies as gifts to friends. My brother, two sisters and I would always look forward to this very special cookie at Christmas baking time. Very happy to share this fun recipe!"

[Recipe doesn't say to remove black gumdrops from the package, but other gumdrop recipes I've seen say to do so. Your call.]

Ingredients

  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups sifted flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups quick oats
  • 1 cup coconut
  • 1 cup gumdrops (try to find small drops that are not spicy, or cut large gumdrops into pieces)

Preparation

Step 1

Thoroughly cream sugars and shortening. Add eggs and vanilla, beat well.

Sift dry ingredients and add oats, coconut and candy.

Drop tablespoonfuls onto greased cookie sheet.

Bake 15 minutes at 375 F.

Cool on wire rack or waxed paper. (Very sticky).
