Ingredients
- 3/4 c. Shawnee Best Yellow Corn Meal Mix
- 1/4 c. flour
- 2 T. sugar
- 1/2 c, milk
- 1 egg
- 3 T. oil
- Variations: Add 1 cup grated cheese or 1/3 c. finely chopped onion to muffin batter
Preparation
Step 1
Preheat oven to 400 degrees.
Stir together corn meal mix, flour & sugar.
In a seperate bowl blend milk egg & oil.
Add liquid ingredients to the dry mix & stir till just moistened.
Spoon batter into greased or paper (foil) lined muffin pan, filling 2/3 full.
Bake 18 - 22 minutes. Yield 6 large muffins.
