Sweet and Spicy Marinade

Makes 1 cup

If you only have one marinade recipe in your repertoire, this should be it. Whether for marinating, braising, baking, or as a basic brush-on bbq sauce, it lends itself to many variations: Substitute 1 tbsp dijon mustard for the ginger. Use the same amount of honey or maple syrup instead of sugar. Add 2 tbsp chopped parsley, cilantro, tarragon, or chives. Try lime zest instead of lemon, or use lemon or lime juice instead of vinegar. Substitute plum or balsamic vinegar for the cider vinegar. Replace shoyu with regular soy sauce or tamari. It's earsy to create a sauce that suits your fancy.

Ingredients

  • 1/2 cup shoyu soy sauce
  • 1/3 cup canola oil or vegetable oil
  • 1/4 cup Worcestershire sauce
  • 2 tbsp cider vinegar
  • 2 tbsp brown sugar
  • 4 garlic cloves, crushed
  • 1 tbsp grated ginger
  • 1 tbsp grated lemon zest
  • 1 tbsp freshly ground black pepper

Preparation

Step 1

Whisk all the ingredients together in a bowl. Use immediately or store in a jar or covered container in the fridge for up to 2 weeks.
