Ingredients

  • Cookies:
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • Icing:
  • 2 cups confectioners' sugar
  • 1 egg white
  • 2 tsp water
  • Blue paste food coloring

Preparation

Step 1

In a large mixing bowl, cream butter, sugar, egg and vanilla. In a separate bowl, combine flour, baking powder, and salt. Stir flour mixture into butter mixture alternating with milk. Wrap dough in plastic wrap and refrigerate overnight.

Preheat oven to 375 F. Trace "flower pot" shaped pattern onto tracing paper and cut out. On a lightly floured surface, use a floured rolling pin to roll out dough to 1/8-inch thickness. Use a paring knife to cut around pattern or use cookie cutter to cut out dough. Transfer cookies to lightly greased baking sheets and bake 8 to 10 minutes or until cookies are lightly browned around the edges. Remove from pans and cool on wire racks.

In a small mixing bowl, combine confectioners' sugar, egg white, and water. Divide icing in half and add blue food coloring to half of icing. Ice cookies with white icing; allow to dry. Use a pastry bag fitted with a small round tip and filled with blue icing to pipe designs. To make sponged cookies, use crumpled plastic wrap to stamp blue icing on cookies.
