Veal piccata

Ingredients

  • 1lb. veal cutlets
  • 1 egg
  • 1/3 c. flour
  • 1/2 tsp. dried oregano
  • 2T. butter
  • 2T. vegetable oil
  • 1/2 lemon, grated peel and juice
  • 1/2 lemon cut into cartwheel slices
  • 1-2 tsp. drained capers

Preparation

Step 1

1) flatten cutlets between two sheets of plastic wrap to 1/4" thickness. in a shallow dish, slightly beat egg.

2) in second dish combine flour with oregano.

3) dip cutlets into egg, then drag in flour mix

4) in skillet, heat butter and oil.over md. heat, saute cutlets 2-3 minutes on each side, until lightly browned. remove to serving dish to keep warm.

5) add lemon peel, lemon juice, cartwheels and capers to pan drippings in skillet.

6) heat and spoon over cutlets
