Ingredients

  • 1 lb of mild sausage

  • 1/2 onion diced

  • 8 oz sliced mushrooms

  • 1 red pepper diced

  • 6 slices whole wheat bread cubed

  • 2 cups frozen tator tots

  • 3 cups grated cheddar cheese

  • 8 eggs

  • 1 1/2 cups milk

  • 1 cup whipping cream

  • 1 tsp mustard

  • 1/2 tsp salt and pepper

  • 2 chopped tomatoes

  • 3 tbsp grated parmesan cheese

Directions

Saute sausage, onions, mushrooms, and pepper together. Dran and crumble together. Set aside Grease 9x13 pan. Spread tator tots and bread crumbs over the bottom of the pan. Position the bread crumbs towards the edge of the pan, crispier bread will taste like built in toast. Sprinkle sausage mixture over the bread. Sprinkle cheese over top. In a bowl, combine eggs, cream, milk, mustard, salt, and pepper. Pour egg mixture over the casserole. Top with chopped tomatoes and parmesan cheese. Bake at 350 for 45 min to 1 hour. This easily makes two 9x13 pans of casserole, so you can cut in 1/2.
