Black Beans (Using a 6 quart Pressure Cooker

Ingredients

  • 1 pound of black beans
  • 10 cups of water (or fill pressure cooker 3/4 full)
  • 1 large green pepper, cored, seeded and halved
  • 1 medium onion, chopped
  • 5 cloves of garlic, crushed
  • 2 tablespoons of olive oil
  • 1 bay leaf
  • 2 tablespoons of fresh cilantro/parsley
  • 2 tablespoons of cumin powder
  • 2 packets of sazon goya
  • 1 chorizo
  • 1 tablespoon of salt
  • 1 large russet potato (May need)

Preparation

Step 1

1) Rinse beans thoroughly and remove any debris and broken beans. Place the rinsed beans in the pressure cooker. Add the water and leave soaking for 6 hours.

2) Set stove to medium heat. Add all the rest of the ingredients and stir. Wait till it boils then put the cover on the pressure cooker.

3) Wait till the pressure cooker begins to whistle. Once whistling, cook for 20 minutes.

4) Remove lid and stir. If too watery and you want to thicken, peel and cut the potato into 6 pieces. Wait till beans boil and then put lid again on pressure cooker. Let it whistle and cook for three minutes.

5) Remove lid again. Take out potatoes pieces (or leave in for a more country feel), bay leaf and green pepper pieces.
