  • 1/2 cup chopped pecans
  • 1/4 cup coconut
  • 1/4 cup flour
  • 1/4 cup dark brown sugar
  • 1/4 teas cinnamon
  • 2 tblsp butter
  • BANANA CAKE
  • 1 1/2 cups flour
  • 1 teas baking powder
  • 1/2 teas baking soda
  • 1/4 teas salt
  • 1/8 teas cinnamon
  • 4 tblsp butter at room temp
  • 1/2 cup packed dark brown sugar
  • 3 tblsp honey
  • 2 large eggs lightly beaten
  • 1 cup mashed bananas
  • 1 tsp vanilla

Preparation

Step 1

in medium bowl combine topping ingredients and work with a pastry blender until it is all worked together

preheat oven to 350 degrees
grease a 9 inch square pan
line bottom with parchment paper and grease paper
in large bowl combine flour, baking powder, baking soda, salt, and cinnamon until well blended
beat together butter, sugar and honey until light and creamy
gradually add eggs

add half the flour, the mashed bananas and vanilla, then add the rest of the flour mixture and beat just until smooth
spoon batter into prepared pan and top with crumb topping

bake 50 to 55 minutes or until middle springs up when pressed down lightly
