Ingredients
- 2 T. olive oil
- 3-4 lb. boneless pork butt or shoulder
- 1 large onion, sliced thin
- 2 cloves garlic, minced
- 2 C. BBQ sauce
- 1/2 C. water
- hot sauce (optional)
Preparation
Step 1
1) lightly spray cooker with pam
2) heat oil in large non stick skillet over md. high heat. add pork after trimming excess fat and tying it and piercing meat several times. brown evenly on all sides and place in slow cooker.
3) add onion and garlic to skillet and cook 7-8 minutes or until soft. add the BBQ sauce, water and hot sauce. bring to a simmer then pour over meat.
4) cover and cook 8-10 hours
5) remove meat and shred with fork. return meat to cooker and stir to combine with sauce. spoon mixture onto roll
