Beef Brisket, Texas Style

Ingredients

  • 1 beef brisket, 6 - 8 lb..
  • 3/4 cup finely chopped onion
  • 2 tsp. paprika
  • 1/2 tsp. pepper
  • water
  • 1 cup prepared steak sauce
  • special sauce

Step 1

Trim fat covering brisket to 1/4 inch. In small bowl, combine onion, paprika, and pepper. Rub mixture evenly over surface of brisket. Place brisket, fat side up in a large foil pan. Cover pan tightly with foil. Place pan in center of grill over low flame. Cover grill and cook for 5 hours, turning brisket every 1 1/2 hours. Add 1/2 cup water as needed to pan. Remove foil from pan. Remove brisket, place on grill directly over coals. Combine pan drippings with steak sauce, reserve 1 cup mixture for special sauce. Brush some of the remaining mixture over brisket. Cover grill and cook brisket 1 hour longer, brushing occasionally with sauce mixture. Cut into thin slices and serve with special sauce.
