Autumn Chopped Salad

Ingredients

  • 3 strips romaine lettuce; chopped
  • 1 cup fresh chopped apple
  • 1 cup fresh chopped pear
  • 1 cup roasted sweet potato; cooled and chopped
  • 1/2 cup dried cranberries
  • 1/2 cup toasted walnuts or pecans
  • 1/4 cup sunflower kernels
  • 1/2 cup crumbled goat cheese
  • DRESSING
  • 1/2 cup extra virgin olive oil
  • 1/4 cup white balsamic vinaigrette
  • 1 tablespoon honey salt and pepper

Preparation

Step 1

Peel a large sweet potato and slice lengthwise into 3/4-inch planks. Toss with olive oil, salt and pepper. Place on a baking pan and roast at 375 degrees until it is fully cooked and begins to brown. Whisk together dressing ingredients in a large bowl. Add all salad ingredients and toss until well combined. Serve in decorative salad bowls.
