Potato Bacon Soup

Ingredients

  • 6-7 lge potatoes, peeled & cut into bite-size pieces
  • 1 med. onion, chopped
  • 2 cans chicken broth
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 8 oz. cream cheese, softened & cubed
  • 1/2 stk unsalted butter
  • salt & pepper to taste
  • 1/2 c. milk for thinning if wanted
  • 1 pkg real bacon or crumbled bacon
  • cheddar cheese, shredded
  • green onions

Preparation

Step 1

Cook potatoes & onion in chicken broth along with just enough water to cover potatoes & onion. Cook until tender. When tender, mash some potatoes, leaving some in chunks. Add cream cheese. Remove from heat until cheese is melted. Return to low/medium heat. Add 1/2 bacon, soups, butter & spices. Cook for another 10 mins. or so.
Garnish with shredded cheddar cheese, bacon pieces & green onion.
I also added small amount of shredded cheese to soup.
