Ingredients

  • 1 can (1-lb. 4 oz.) Pineapple chunks
  • Drain pineapple well, reserving syrup.
  • 1 lb. ground chuck beef
  • 1 egg
  • 2 slices fresh bread, crumbled
  • 1 tablespoons instant minced onion
  • 1 teaspoon salt
  • 1/8 teaspoon cloves
  • 1/8 teaspoon allspice
  • 2 tablespoons reserved pineapple syrup
  • Mix together beef, egg, bread crumbs, Onion, salt, cloves, allspice and syrup. Mold small amount of mixture around each pineapple chunk. Place meatballs in 12 X 8 X 2 inch dish. Cover with wax paper. Microwave at High 4 minutes. Pour off meat juices.
  • 1/3 cup reserved pineapple syrup
  • 1/2 cup ketchup
  • 1/3 cup brown sugar (packed)
  • Stir together syrup, ketchup and brown sugar. Pour over drained meatballs. Microwave at High 3 to 5 minutes longer, until done. Serve with rice or noodles, or serve with toothpicks as an appetizer.
  • (Makes about 24 to 30 meatballs.)

1/3 cup brown sugar (packed)
Stir together syrup, ketchup and brown sugar. Pour over drained meatballs. Microwave at High 3 to 5 minutes longer, until done. Serve with rice or noodles, or serve with toothpicks as an appetizer.
