CRANBERRY ORANGE STREUSEL BARS

Ingredients

  • 1 12 oz bag of fresh cranberries
  • 1 1/2 cups flour
  • 3/4 cup oatmeal
  • 3/4 cup light brown sugar
  • 1/8 teas nutmeg
  • 1/2 teas baking powder
  • 1/4 teas salt
  • 1/2 cup butter cut into small pieces and softened
  • 1 large navel orange
  • 1 can sweetened condensed milk
  • 2 large egg yolks
  • 1/4 teas vanilla
  • 1/4 cup sliced almonds

Preparation

Step 1

let cranberries stand at room temperature for an hour
preheat oven to 350 degrees
foil line a cake pan and then grease foil liberally
in large bowl combine flour, oats, sugar, nutmeg, baking powder and salt with fingers work in butter until evenly distributed
reserve one cup of mixture for topping
transfer remaining mixture to prepared pan
bake 12 minutes or until golden brown
while crust bakes grate 1 teaspoon zest and squeeze 1/3 cup juice
in medium bowl whisk juice together with sweetened milk, egg yolks and vanilla until thoroughly combined
sprinkle cranberries over crust
pour orange mixture over berries
bake 7 minutes or until orange mixture starts to form a skin around the edges
remove from oven and top with remaining topping and spread almonds over the top
bake 30 minutes more
cool in pan on wire rack for one hour and then lift out by foil and cut into bars
